Welcome to the realm of Japanese natural water stones. The names and descriptions of these stones can be very confusing and ambiguous. Often their names come from the mountain they were quarried on, or based on their colors or based on their hardness. Sometimes the stones are named according to their most common use. Prices are based on several factors, such as hardness of the stones, size of the stone, level of natural flaws, and finally, the dictates of supply and demand.
After hand sharpening more than 50,000 blades and with more than fifteen years exposure to natural stones, it is my observation that the only reliable way to ascertain the usefulness of a specific stone is to spend several hours with it sharpening several favorite blades. What the user is looking for is a special match between the metallurgy of the blade and the grinding characteristics of the stone. Eventually, the diligent sharpener will discover a "perfect" match between a specific stone and blade, and enjoy a sharpening experience that is impossible to get when using synthetic stones.

We offer up to 85% credit on any stone purchased from us when sent back to exchange it for another. If the stone being returned is of greater value than the replacement, then Carter Cutlery will hold the balance so that the customer can apply it towards any future purchase.
