These knives are stamped with a unique combination of letters “NYAJ” which stands for “Not Your Average Joe,” in honor of Joe Kertzman, editor of BLADE’s Guide To Making Knives, 3rd Edition, in which Murray authors the chapter on Making Kitchen Knives.
*NOTE: Because all of Carter Cutlery blades have a forged distal taper (thicker in the middle, more thin towards the tip), the blade thickness given is dependent on what part of the blade is measured.
